La Sélection is composed of boxes of traditional cheeses, selected by Xavier Thuret. Winner of the Meilleur Ouvrier de France (best French craftman) award for cheese makers in 2007, Xavier Thuret is a recognised expert in cheese. 

The Meilleur Ouvrier de France (MOF) competition rewards excellence in 230 professions, including that of cheese maker. This competition, comprising a number of tests, honours the quality and know-how of the best artisan cheese makers. 

Xavier Thuret is passionate about the terroir, and his ambition is not only to promote French gastronomy throughout the world but also to reinterpret the cheeseboard. From Saint-Marcellin topped with caviar to Camembert with kiwi, Xavier tirelessly seeks to bring a fresh perspective to cheese and to raise its profile worldwide. Today, he offers his selection of the best French cheeses, and his expert advice with bold and original pairing ideas.

Dedicated to the hospitality and catering industry

Created specifically to meet the needs of the hospitality and catering industry, our boxes will allow you to prepare your cheese boards with optimum efficiency. Each box contains whole or pre-cut cheeses so that you can assemble your cheese boards or plates quickly.

Our assortment of cheeses enables you to optimise your purchases and effectively manage your costs with fixed-price boxes from a single supplier. A data sheet is included for each cheese, which will help you to train your teams in how to store and cut the cheeses.

Each data sheet features advice from MOF winner Xavier Thuret, allowing you to enhance your offering with an original approach, for example by pairing Espelette pepper with Ossau-Iraty. You can also serve cheeses from La Sélection for your brunches and breakfasts, or to accompany a glass of wine or spirits.

Xavier Thuret proposes a selection of PDO and PGI cheeses made and matured in our dairies.

French cheese at its best:

In his selection, Xavier Thuret offers an array of PDO and PGI cheeses made and matured in our dairies in the heartlands of France.

PDO (Protected Designation of Origine) is a European quality label, the aim of which is to protect and preserve regional products. PDO cheeses are processed and prepared in a geographical area determined according to recognised know-how and precise specifications.PDO guarantees that all stages of production comply with specifications, from milk production to maturing the cheeses.

PGI (Protected Geographical Indication) is attributed to cheese whose quality, reputation or other characteristics are related to its geographical origin. In our selection, you will also find local cheeses such as Pérail, produced in keeping with the cheese-making traditions of the Aveyron shepherds, and extra-aged Mimolette, made using techniques passed down through the centuries.
